Gramps's Cookies

For a long time I'd thought the recipe for my grandfather's cookies were lost to the kitchens of time. They were such good cookies and are one of the most memorable things from our weekend visits. I recently found myself cleaning out my father's office and came across my Grandmother's old recipe box, in which I found this gem in my Grandmother's distinctive hand.

  • 3/4 cup corn oil
  • 1 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup water
  • 1 tsp vanilla
  • 3 cups uncooked rolled oats
  • 1/2 tsp baking soda
  • 1 cup flour
  • 1 tsp salt
  • 1 tbsp honey
  • 1 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 cup coconut
  • 1/2 cup candied lemon peel
  • pecans
  • honey

Mix together oil, brown sugar, white sugar, eggs, water, vanilla, uncooked rolled oats, baking soda, flour, salt, honey, walnuts, raisins, coconut and lemon peel (if you can find it) together into an even dough.

Spoon dough out into double spoonfools and top each with pecan and 1 teaspoon of honey.

Cook 14-18 minutes at 350F degrees.
