Tomatoes Rockefeller Unverified!

Yield: 6 serving


  • 3 large tomatoes, cut in half
  • 2 Tbsp minced onion
  • 2 Tbsp minced parsley
  • 1 Tbsp butter or margarine, softened
  • 3/4 cup chopped fresh spinach, drained (about 1/12 cups fresh spinach)
  • salt and pepper, to taste
  • 2 Tbsp seasoned bread crumbs


Place tomatoes cut-side up in a lightly oiled baking dish. Combine onion, parsley, butter, spinach, salt, pepper and paprika; spread evenly over tomatoes. Top with crumbs. Bake at 375F for 15 minutes.
