Salmon Mouse Unverified!

I am not sure what you could call this in the modern age: I think this sounds like it could be pretty interesting but I think you'd have a hard sell with "well, its mousse! Its uh, made with salmon!" Probably "salmon spread" these days? A bit of a curiosity on the cream measure. The notation is "1/c" and its added by thirds, so a full cup makes sense.


  • 1 envelop Knox gelatin
  • 2 Tbsp lemon juice
  • 1/2 bunch green onions, with a few tops
  • 1/2 cup boiling water
  • 1/2 cup mayonnaise
  • 1/2 tsp paprika
  • 1 Tbsp dill weed
  • 1 16 oz can salmon, drained and boned
  • 1? cup whipping cream


Put gelatin in blender. Add lemon juice etc + boiling water. Blend for 40 seconds and turn off. Add rest of ingredients + blend at high speed until mixed. Add cream 1/3 at a time. After each addition blend for a few seconds. When all cream is in blend for 30 seconds. Pour into mold and chill
