Moussaka Unverified!


  • 1 eggplant
  • 1 cup butter or margerine
  • 1 large onion, chopped
  • 3/4 pound ground beef
  • 1 Tsp tomato paste
  • 1/4 cup chopped parsley
  • pinch cinnamon
  • salt or pepper to taste
  • 2 Tbsp flour
  • 5 oz milk
  • 2 eggs, beaten until frothy
  • nutmeg, to taste
  • 1/3 cup fine bread crumbs
  • 1/3 cup Parmesan cheese


Peel eggplant and slice 1/2 inch thick. Brown in butter. Cook onions until slightly brown. Cook meat 10 minutes. Combine tomato past and other ingredients. Make sauce of 3 Tbsp butter, flour and milk. Stir in beaten eggs.

[sadly this is the end of the instructions. Similar reference recipes from The Internet suggest all remaining ingredients layer into a deep pan and are baked 30-40 minutes. Perhaps these things were transparent to my grandmother. Else she should have used a bigger card]
