Tortilla Pie Fave!

I stood in fear of this recipe for some time, having horrible recollections about a dish involving tortillas and worrying that this one was perhaps it. I've made it several times and under several conditions including make-ahead freezing and have not yet come up with a mystery method for fouling this thing up. Delicious 70s goodness! The original recipe called for a "small can of niblets" which I like for sentimental reasons but we roll with big bags of frozen kernels at our house and that works fine too.


  • 1 lb hamburger
  • 1 onion, chopped
  • 2 cups tomato sauce
  • 1-2 Tbl chili powder
  • 1+ cup corn
  • salt and pepper
  • 1 small can olives
  • 2 tortillas
  • 1 cup cheddar cheese, grated


Brown hamburger and onion together in skillet. Remove from heat and mix in chili powder, tomato sauce, and corn. Season with salt and pepper to taste.

Arrange a layer of tortillas on the bottom of casserole. Put half of the sauce in a layer and top with chopped olives and grated cheese. Repeat.

Bake at 325F for 30 minutes.
