Grilled Chicken Parma

A keeper recipe from a time Hilary was on a marginally successful menu planning email list.


  • 1 lb bonless skinless chicken breast halves
  • 1 Tbl olive oil
  • 1 cup shreeded Mozarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sliced basil leaves
  • 2 medium tomatoes, sliced
  • heavy duty aliminum foil


Brush chicken wih oil. Combine cheeses and basil in a dish and set aside Grill chicken for 4-5 minutes per side before topping with tomato slices and cheese mixture and covering in foil to cook for another 2 minutes or until cheese melts.
