Falafels Unverified!

Yield: 8 rounds


  • 1 15 oz can chickpeas (garbanzos), drained
  • 1 garlic clove, crushed
  • 2 Tbl chopped fresh parsley
  • 2 Tbl chopped fresh cilantro
  • 1 Tbl chopped fresh mint
  • 1 tsp cumin seeds
  • 2 Tbl fresh bread crumbs
  • 1 tsp salt
  • freshly ground pepper
  • oil, for deep frying
  • pitas, lettuce, tomatoes, tahaini or yogurt, for serving


Grind the chickpeas in a food processor until smooth then add all the other ingredients except the oil. Heat 1/4 inch of oil in a frying pan and fry a few at a time. Cook each for 8 minutes, turning just once. Drain on paper towels. Serve in pitas with lettuce, tomatoes and tahaini or yogurt.
