Egg Flower Soup

Egg Flour Soup, also known as "Egg Drop Soup" is one of my favorite Chinese Food treats. Well worth making.


  • 4 cups stock
  • 3 Tbl light soy sauce
  • 2 Tbl dry sherry
  • 3 scallions, sliced obliquely
  • small piece fresh ginger, shredded
  • 4 lettuce or cabbage leaves, shredded
  • 1 tsp seasame oil
  • 2 eggs, beaten


Mix together stock, soy sauce, dry sherry , 3 scallions, ginger, lettuce leaves and sesame oil and bring to a boil and remain for two minutes.

Gently pour the eggs into the broth in a thin, steady stream into the center of the pot. Let sit for three seconds and quickly stir the soup. Season to taste and allow eggs to cook. Serve immediately.
