Best Way Pie Crust Unverified!

Yield: 1 shell

  • 1 1/2 cups all purpose flour, additional for dusting
  • 1/2 tsp salt
  • 1/4 cup vegetable shortening
  • 1/4 cup unsalted butter, cut into small pieces
  • 3-4 Tbl ice water

Mix together flour, salt, shortening and butter with food processor until mixture resembled breadcrumbs. Cut in just enough water with a fork so dough holds together. Form a disk and let refrigerate firmly wrapped for one hour.

Roll out dough on 2 sheets of waxed paper until 1/8 inch thick and has (roughly) a 13" diameter. Place in pan and trim to 2" extra diameter total (1" all around). Roll the end under and crimp.

Pies can be prebaked by lining shell with aluminum foil shiny-side down and filling with beans or rice at 425F for 15 minutes then an additional 10-15 minutes after removing foil and weight. Pan should be rotated "a couple of times" for max win.
