Zucchini and Onions Unverified!

Yield: 4 servings

Ingredients

  • 1 1/2 lbs zucchini
  • 2 Tbsp butter
  • 1 onion, cut in wedges
  • 1 clove garlic, minced
  • 3/4 tsp salt
  • 1 1/2 tsp basil, crumbled
  • 1/4 tsp pepper
  • 6 oz Monterrey cheese

Preparation

Slice zucchini diagonally, very thin. Melt butter in large skillet. Add all except cheese. Cover, cook on medium heat 8 minutes, shaking skillet or stirring or until vegetables are crisp tender. Put in shallow baking dish. Layer with jack cheese. Broil until cheese is melted. Server quick! Give seconds.
