Combine, flour, sugar, lemon peel; make well in center. Cut butter or margarine into small pieces, add to dry ingredients. Add egg yolk and vanilla. Mix ingredients with fork until soft & well combined. Roll into ball. Press dough over bottom and sides of 10-inch pie plate; don't extend dough over rim. If dough becomes hard to handle, chill a few minutes. Prick with fork & bake in 400F oven 10 min. Cool before filling.
Cream cottage cheese well; slowly add sugar, flour, salt & lemon peel. Add eggs and egg white one at a time, beating well after each. Ad vanilla & lemon juice. Pour into crust. Bake in 400F oven 30-35 min. until filling is set. Cool before topping.
Combine thawed strawberries, cornstarch & sugar in small saucepan; cook over low heat, stirring constantly until thick and clear. Remove from heat; blend in lemon peel & juice. Cool slightly; spoon over pie. Garnish with sliced strawberries. Can be served at once or after chilling.
