Tuna-cashew salad Unverified!

Ingredients

  • 3 cups cooked rice, cooled
  • 2 cans (6 1/2 oz) tuna, drained + flaked
  • 1 cup chopped celery
  • 1/3 cup chopped cashew nuts
  • 1/4 cup chopped onion
  • 1 Tbsp capers

Dressing

  • 1 cup mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp curry powder
  • 1/2 tsp salt

Preparation

May serve with condiments of cherry tomatoes, cashew nuts, chopped parsley, minced green onion or chopped green pepper.
