Salmon Muffins (Sea Food Supreme) Unverified!

Ingredients

  • 1 16oz. can cup
  • 1/2 cup diced celery
  • 1/4 sour cream
  • 3 English muffins, split and toasted
  • 6 eggs, poached
  • 1/2 cup shredded Swiss cheese

Mustard dill sauce

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1 1/4 cup milk
  • 1/2 cup sour cream
  • 1 cube chicken bullion, crumbled
  • 1 Tbsp Dijon mustard
  • 1 tsp dill weed
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Preparation

Drain salmon. Combine with celery + sour cream. Spread mixture over muffins and flatten. Place a poached egg on each. Top with cheese. Place in oven at 400F to melt cheese. Cover with mustard dill sauce.

Mustard dill sauce: cook until sauce thickens but do not permit to boil. May add sour cream last.
