Hawaiian Yogurt Muffins Unverified!

Ingredients

  • 2 cups Biscuit Mix
  • 1/4 cup sugar
  • 1 tsp soda
  • 1 8oz carton apricot-pineapple or other flavor yogurt
  • 1 egg, slightly beaten
  • 1/2 cup coconut

Preparation

Combine all ingredients in a bowl and fold together until thoroughly moistened but DO NOT BEAT. Mixture will seem too dry at first, but resist adding more liquid. Do not over mix. Makes 11 muffins using a #20 scoop to fill creased muffin tins. Bake 15 minutes at 350F.
