Frozen Lemon Pie Unverified!

Ingredients

  • 1 1/2 lemons, juiced
  • 1 lemon rind
  • 3 egg yolks
  • 1/8 tsp salt
  • 3 egg whites
  • 1/4 cup sugar
  • 1 cup whipped cream
  • 1/2 lb vanilla wafers

Preparation

Mix together lemon juice, rind of one lemon, yolks and salt and cook until thick, then cool.

Beat whites and add sugar.

Fold in lemon mixture.

Fold in whipped cream.

Roll 1/2 lb vanilla wafers. Use half on the top and half on the bottom. Freeze.
