Company Casserole Unverified!

Yield: 6 servings

Ingredients

  • 2 1/2 cups egg noodles, green
  • 1 Tbsp cooking oil
  • 1 pint small curd cottage cheese
  • 1 pt sour cream
  • 1 1/2 tsp oregano, crumbled
  • 1/2 tsp thyme, crumbled
  • 1/2 tsp salt
  • 1/3 cup minced parsley
  • 1 lb ground beef
  • unknown quantity (guess 1/2 small) onion, minced
  • 1 clove garlic
  • additional 1/4 tsp salt
  • 1 6oz can tomato paste
  • grated Parmesan

Preparation

Cook noodles 10 minutes. Rinse in cold water. Mix with oil. Place in 3 quart baking dish. Mix cottage cheese, sour cream, oregano, thyme and 1/2 tsp salt. Spoon in layers over noodles. Sprinkle with parsley. Saute beef with onion and garlic in skillet. Mix in 1/4 tsp salt and tomato paste. Spoon over cheese layer. Sprinkle with Parmesan*. Bake in 400F oven for 30 minutes.

* - Original recipe read "sprinkle with tomato paste" which I'm sure wasn't what she meant.
