Bacardi Rum Cake Nell Unverified!

Ingredients

  • 1 cup chopped nuts, walnuts or pecans
  • 1 pkg yellow cake mix*
  • 1 pkg instant pudding mix*
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil
  • 1/2 cup cream sherry

Glaze

  • 1/4 or 1/8 lb margarine (1/2 cube)
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup rum

Preparation

Grease and flour cake pan. Sprinkle nuts on bottom of pan, pour batter over nuts. Bake 1 hour at 325F.

Glaze: Mix together margarine, water and rum and boil to a light syrup -- 4 minutes. Add 1/2 cup rum. Punch holes in cake. Drizzle glaze over it.

[* -- Its exceptionally hard these days to find yellow cake mix without the pudding included as part of the mix. Assuming that's what you'll find, you can exclude the additional pudding]
