Almond Tabbouleh Unverified!

Ingredients

  • 1 cup Bulgar (cracked wheat)
  • 2/3 cup sliced green onions
  • 1/2 cup chopped parsley
  • 2 tsp chopped mint
  • 2/3 cup chopped almonds, toasted
  • 2/3 cup cherry tomatoes, quartered or 1/2 cup raisins
  • 1/3 cup lime or lemon juice
  • 1/4 cup oil
  • salt & pepper to taste

Preparation

Pout boiling water over Bulgar and set aside about 30 minutes until complete absorbed. Add remaining ingredients, toss, cover & chill for at least 2 hours. Serve on romaine leaves. (Very Good)
