LaScala Scampi

I imagine "La Scala" as being That Place on the Lake Almanor Peninsula back in 1978. I'll say that this recipe has a distinct "almost healthy except for that huge gob of olive oil bit."

Ingredients

  • 24 large prawns or shrimp, peeled, de-veined and split lengthwise
  • salt and pepper
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • 1 lemon, juiced
  • 1/2 cup chicken stock
  • 2 large shallots, chopped
  • 2 Tbl basil
  • 2 Tbl oregano

Preparation

Arrange butterflied prawns in baking pan. Season to taste with salt and pepper. Combine oil, wine, lemon juice, chicken stock, shallots, basil and oregano and pour over shrimp.

Cook under broiler for 10 minutes or until golden.
