Greek Pickled Mushrooms Unverified!

Ingredients

  • 1 lb mushrooms, trimmed
  • 1 1/2 cups water
  • 3/4 cup olive oil
  • 2 tbl lemon juice
  • 1 small clove garlic, minced
  • 1 stalk celery, diced fine
  • 1 Tbl white wine vinegar
  • 1/4 tsp fennel seed
  • 1/4 tsp oregano
  • 3/4 tsp coriander
  • 1 bay leaf
  • 1/4 tsp whole black peppers
  • 1 tsp salt

Preparation

Combine all ingredients except mushroom and simmer for fifteen minutes. Add whole mushrooms and cook five additional minutes. Refrigerate for at least 24 hours before serving at room temperature.
