Corn and Cheese Purses Unverified!

Ingredients

  • 9 oz corn
  • 4 oz feta cheese
  • 1 egg, beaten
  • 2 Tbl heavy cream
  • 1 Tbl grated Parmesan cheese
  • 3 scallions, chopped
  • freshly ground black pepper
  • 8-10 small filo sheets
  • 1 cup butter, melted

Preparation

Butter two cookie sheeets. Strip the kernels from the cobs if using cobs. Simmer corn 3-5 minutes in "a little" salty water. Simply drain and rinse canned con.

Mix corn and feta into a medium bowl. Add the egg, cream, Parmesan cheese, scallions and ground black pepper and mix well.

Cut sheet of filo dough in half to form a square and cover reserved half with damp cloth until ready for use. Brush square with melted butter nad foldinto fourths to make a smaller, 3" square. Place haping teaspoon of orn mixture in the center of the pasty square ad squeeze the pastry around teh filling to make a "money bag" casing. Fill purses until one reaches ingredient limits. Brush each bag with remaining butter nad backe at 375F for fifteen minutes or until golden brown.
