Clementine Marmalade Unverified!

We live close to clementine country here in Northern California. They're inexpensive and plentiful for a short time.

Ingredients

  • 2 cups thin stripped clementine, 1" long
  • 3 cups cold water
  • 8-10 clementines, pulped and juiced
  • 1/3 cup lemon juice
  • 2 cups boiling water
  • 3 cups sugar

Preparation

Heat clementine peel and cold water to a covered moderate simmer. Continue to simmer until tender -- around 30 minutes.
