Peel and cut potatoes into eights. Place in a large pot and cover with water. Add 1 salt and simmer over medium-high heat. Simmer until poatoes are cooked through, about 12-15 minutes. Drain and shake to remove moisture.
Warm cream over low heat or in 30 seconds of microwaving.
Mash potatoes in a large bowl to preference. Fold in butter and cream. Season to taste.
