Beef tri-tip with salsa

Part of the 2009 tri-tip shootout.

Ingredients

  • beef tri-tip

Marinade

  • 1/2 cup soy sauce
  • 1/2 cup fresh lime juice (about 2 lg. limes)
  • 1/2 cup bourbon whiskey
  • 2 Tbl freshly grated or shaved ginger
  • 2 Tbl currant jelly
  • 1 Tbl crushed red chili peppers

Salsa

  • 4 medium tomatoes, peeled
  • 2 bunches green onions, thinly sliced
  • 2 medium jalapeno pepper, washed
  • 1 medium avocado, chopped
  • 1/2 cup chopped fresh cilantro
  • 1 Tbl black pepper, freshly ground
  • 1 Tbl sea salt

Preparation

Mix together marinade ingredients and marinate beef overnight. Prepare salsa the day ahead. Grill beef and serve with salsa.
