Banana Muffins Unverified!

Yield: 12 muffins

Ingredients

  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1/ sp salt
  • 4 overripe bananas
  • 1 cup brown sugar
  • 3/4 cup unsalted butter, melted and cooled
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans

Preparation

Whisk together flour, baking soda and salt. Mash and mix together bananas, brown sugar, melted butter, eggs and vanilla. Fold in flour mixture and pecans until just incorporated.

Fill muffin tins. Cook at 350F for 18-20 minutes.
