Combine salad ingredients and set aside. Mix together dressing components using just enough lime juice to lighten the dressing. Season the dressing with salt and pepper.
Cut fish into roughtly 1-inch by 2-inch sections.
Heat three inches of oil to 350F.
Mix together the batter ingredients until it just combined. Dredge fish and place in hot oil, suspending for three seconds before releasing. Cook, turning once, until the fish turns golden brown and floats.
Drain on paper towels.
Assemble with salad, lime mayo, salsa, lime juice & fish
