21st Amendment Tacos Unverified!

Ingredients

Cilantro Sour Cream

  • 1/2 cup sour cream
  • 1/2 bunch cilantro
  • 2 tsp lime juice

Chipotle Sauce

  • 1/4 cup canned chipotle chiles in adobo sauce
  • 1/4 cup water
  • salt and pepper

Cabbage salad

  • 1/2 cup green cabbage, finely shredded
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper, to taste

Fish

  • 8 oz rock cod or other white fish, cut into 1/2-inch cubes
  • salt and pepper
  • 1/2 cup all-purpose flour, for dredging
  • vegetable oil

Assembly

  • tortillas
  • salsa
  • etc.

Preparation

Blend sour cream, cilantro and lime juice. Cover and refrigerate.

Blend chipotles and water at low speed until smooth.

Combine cabbage salad ingredients.

Season rock cod with salt and pepper, lightly dredge and fry over in 1/2-inch of oil over medium-high heat. Cook for two minutes, turning once or until cooked through. Drain onto paper towels.
