Notes:
A tasty from my modern version of "The Joy Of Cooking". The rub works pretty well on pork tenderloin as well.
Ingredients:

3/4 tsp

salt

3/4 tsp

dry mustard
|
|
1 1/2 tsp
|
fennel seeds
|
|
1 1/2 tsp
|
ground coriander
|
|
1/4 tsp
|
ground cinnamon
|
|
1/4 tsp
|
ground red pepper
|
|
4
|
boneless and skinless chicken breasts
|
|
1/4 cup
|
olive oil
|
|
1/4 cup
|
minced cilantro
|
|
3 Tbl
|
fresh lemon juice
|
|
1 small clove
|
garlic,
minced
|
|
dash
|
salt
|
Preparation:
Mix together salt, mustard fennel, coriander, cinnamon and red pepper; crushing in the fennel seeds in a mortar & pestle or against the side of the bowl with a strong metal spoon.
Rinse and pat dry chicken breasts and evenly coat all sides with spice mixture.
Grill chicken and prepare sauce: mix olive oil, cilantro, lemon juice, garlic and a dash of salt in a small bowl. Drizzle oil mixture over chicken just prior to serving.
Olive oil mix may be made ahead of time and chilled -- the difference in temperatures between the oil and the chicken is rather pleasant.
